Spiced Date and Cinnamon Omelette
This month I’m sharing a selection of recipes for Asda as part of their Ramadan series. This is one of my favourite recipes to start the day – a sweet, buttery, omelette filled with caramelised dates and warming spices. Serve with some flatbreads or naan.
100g pitted Madinah Khudry dates, halved
¼ tsp cinnamon
¼ tsp ground ginger
6 tbsp water
¼ tsp sea salt
2 tbsp milk
2 tbsp butter
Flaked toasted almonds to garnish (optional)
Place the dates, cinnamon, ground ginger and water in a small pan. Stir well, put a lid on the pan and cook on a low heat for a couple of minutes, until the dates have softened.
Meanwhile, crack the eggs into a bowl and add the salt and milk. Beat with a fork until fluffy.
Put a frying pan over a low heat and let it get hot. Add the butter. When it has melted and is bubbling, add the dates and fry for 2 minutes. Then space the dates out evenly in the pan and then pour the eggs in, giving the pan a gentle shake to spread them out evenly.
Cook until the omelette is almost set and then fold in half and lightly press down. Slide onto a plate and dust with a little more cinnamon and some flaked toasted almonds if you are using them.
